Ingredients:
1 sheet frozen puff pastry, thawed, rolled a little thinner, and cut into 5-inch rounds
3–4 large apples, cored and thinly sliced
creme fraise
¾ cup of shaved white cheddar cheese
½ of a thinly sliced shallot
coarse sea salt and pepper
fresh tarragon
¼ cup unsalted butter, melted
Preheat the over to 400 degrees. Place pastry rounds on a parchment-lined baking sheet; fold up the edges. Then add a small amount of creme fraise, spread evenly in each round. Layer the apple slices on the creme fraise; then sprinkle on the cheddar cheese, the shallot slices, tarragon, coarse sea salt, and pepper. Bake until the edges of the pastry are golden brown (about 20 minutes). Serve warm and enjoy.
