Jack and Chaco Gelato
1 1/2 Cups of Whole Milk
3 scraped Vanilla Beans
2 tablespoons Cocoa Power
1/4 cup of dark Chocolate chopped
1/8 of a teaspoon of Cayenne Pepper
1/3 of a cup of Jack Daniels Whiskey
5 large Egg Yolks
1/2 Cup of Sugar
1 Cup of Heavy Cream
1/4 cup of chocolate chips or shavings
1.Heat the milk in a stainless steel saucepan, when bubbles appear around the edge of the pan remove from the heat and add the vanilla then let the milk and the vanilla steep for 20 minutes.
2.While the milk and vanilla is steeping melt the cocoa, the chocolate and the Jack Daniels in a double boiler stir until smooth then set aside.
3.Then on a separate bowl, whisk the egg yolks with the sugar until thoroughly combined; gradually whisk in the warm milk.
4. Then pour the mixture of egg yolks, sugar and milk back into the saucepan and then stirring until until the mixture reaches 170˚ F.
5. Stain the custard though a strainer into a clean bowl and then let cool. After a bit stir in the chocolate and then put bowl into an ice bath and stir until cooled. Place in the fridge until chilled.
6. Then pour into the ice cream maker and follow the manufacturer’s instructions when starting to firm add chocolate shavings.
7 Let it freeze for a few hours intil the mixture is firm before serving.
