Mojo Medallions with Sweet Plantains
1 pork loin, cut into small medallions
2 ripe plantains cut into 1/4 slices
Olive oil
Mojo Sauce
1 bunch cilantro, chopped
1 cup mint, chopped
6 cloves garlic, minced
1/2 small yellow onion
1 juiced orange
3 juiced limes
1 jalapeno, diced
3/4 cup olive oil
1 teaspoon cumin
1 teaspoon oregano
Salt to taste
Add cilantro, mint, garlic, onion, orange juice, lime juice, jalapeno, olive oil, cumin, oregano and salt into
a blender or food processor and blend to desired
consistency.
Heat a grill skillet or cook the pork medallions with a little olive oil until browned on both sides.
In a separate pan heat some olive oil and cook the plantains until browned and caramelized.
Serve the medallions with a drizzle of Mojo sauce and plantains.
