2 ripe avocados
4 eggs
4 tablespoons white cheddar
¼ teaspoon smoked paprika
Salt to taste
Papper to taste
Pickled okra (as a side)
Pickled peppers (as a side)
Chow Chow (as a side)
Fresh bread, toasted
Preheat the oven to 425 degrees. Slice and pit the avocados, then scoop out a little from each avocado—enough to fit an egg in each. For each avocado separate the egg and the yolk, place the yolk in the avocado, then fill with the remaining egg white to fill the hole of the avocado to the top. Cover each avocado with a tablespoon of white cheddar and sprinkle with smoked paprika. Sometimes to keep the avocado level it helps to make a base of aluminum foil. Then place the avocados in the oven for 15-20 minutes. Toast the bread and butter. When you plate the avocado, salt and pepper to taste, and place a little okra and chow chow on each plate. Serves two.
